International food chains span growers, processors, distributors, and retailers across multiple countries and regulatory regimes, and a single weak link can trigger a recall, a health crisis, or a market ban. This course builds practical understanding of food safety governance — international standards (Codex, HACCP, ISO 22000), traceability systems, and the audit and certification processes that hold a supply chain accountable end to end.
Using real food-chain incidents as case studies, participants leave able to assess governance gaps in their own supply chain and design stronger controls.
Throughout the programme, participants work through realistic scenarios drawn from development initiatives, donor-funded programmes, nonprofit operations, and public sector environments, examining how governance and food safety in international food chains is applied in practice and where it most often breaks down. Delegates will develop practical skill in designing appropriate frameworks, selecting and applying the right tools for conducting a HACCP hazard analysis, interpreting findings, and communicating conclusions clearly to colleagues, management and external stakeholders.
